We have had such crazy weather here in Edmonton and the urge for some chocolate chip cookies hit when it was freezing cold and snowy. I was so tired after the 5 day drive home from the States that the thought of getting into the car in -30°C weather made me want to cry. So I threw caution to the wind and made them anyways.

As long as your cookies reach 165°F in the middle, you have killed all the bacteria in the raw eggs and you are fine to eat them. That’s all. There is no need to worry about your cookies if they are gooey in the middle.

That’s another cookie secret. All you have to hit is that 165 °F and then your cookies are safe to eat. At that temperature they are so wonderfully ooey, gooey and chewy!

Hmm. I’m a poet and I didn’t even know it. Ooooey gooooey chewy.

They are REALLY good cookies! I was making them for a party and wanted them to still be warm so I was timing it with a little extra time left over and instead of it taking 8 minutes it took closer to like 35. I thought they were the same size as directed so I don’t know what happened. I will still make them again though.Chocolate Chip Cookie Recipe Without Baking Soda or Baking Powder (13)

They were so good! Just leave them in for a little longer and in the middle of the baking press them down just a little bit. This makes dough a good cookie for no baking powder or soda.Chocolate Chip Cookie Recipe Without Baking Soda or Baking Powder (14)

These cookie were great! I used cold butter to allow for some carmalization! Once baked 12-15 mins the cookies came out perfect crisp on the bottoms and chewy and a little doughy!

Also if you guys are going to be so rude at least provide a little context not just these are trash. These cookies do not have baking soda or powder in them so you will not get the texture you are use too.

As with most recipes you can add more vanilla or cinnamon or almond flavoring!Chocolate Chip Cookie Recipe Without Baking Soda or Baking Powder (16)

I’ve been a Chef for 29 years! These cookies are WONDERFUL! I was skeptical myself but having neither of missing ingredients in my house at the time I tried it anyway. We were blown away and ate every single one. As sow
One said they were crisp on the bottom and chewy and gooey inside. It is my opinion that they are even better than the “real thing” the consistency was superb!Chocolate Chip Cookie Recipe Without Baking Soda or Baking Powder (18)

FAQs

What happens if you don t use baking powder or baking soda in cookies? ›

Without baking soda or baking powder, these cookies will remain a little flatter then other recipes but because of the eggs and creaming of the butter and sugars in this recipe they will still puff up a little in the oven. They will have crispy edges and a soft, chewy center.

How do you bake without baking soda or powder? ›

Baking Soda Substitute: Egg Whites

Whipped egg whites can give your recipe structure and add leavening abilities. They work better when substituted for baking powder, but can work as a baking soda alternative in a pinch. How to substitute egg whites for baking soda: Beat egg whites until foamy and stiff.

Do chocolate chip cookies need baking soda and baking powder? ›

Using both of these leavening agents ensures your cookies rise properly and have the texture you're looking for. So, if you're trying out a new cookie recipe requiring both baking ingredients, don't be scared to give it a shot.

What is a substitute for baking soda and baking powder? ›

If you don't have either baking powder or baking soda, consider switching gears and relying on another type of leavener altogether: whipped egg whites. Instead of sparking a chemical reaction to produce carbon dioxide, whipped egg whites introduce air to the batter, bringing natural height to your baked goods.

What happens if you don't put enough baking soda in cookies? ›

It is possible to make cookies without baking soda or baking powder, but the resulting cookie will be dense. This is because carbon dioxide is not being produced by a chemical reaction that typically occurs when baking soda or powder is present in the cookie batter.

What can replace baking powder? ›

Substitute each teaspoon (5 grams) of baking powder in the recipe with 1/4 teaspoon (1 gram) baking soda and 1/2 teaspoon (2.5 grams) vinegar. Summary: Each teaspoon (5 grams) of baking powder can be replaced with a 1/4 teaspoon (1 gram) baking soda and a 1/2 teaspoon vinegar.

What happens if you make cookies without baking powder? ›

Expect about one teaspoon per five ounces of flour; thin and crispy cookies may need a little less, thick and chewy cookies may need a little more. Even without baking powder, a well-aerated dough will still puff with steam. If that supply cuts off before the cookies set, a soft dough will collapse in on itself.

What is a substitute for baking soda in chocolate chip cookies? ›

Baking Soda Substitute: Baking Powder

Baking powder actually has baking soda in it! For this substitute, try using about 1 teaspoon of baking powder for every 1/4 teaspoon of baking soda called for in a recipe.

Do chocolate chip cookies need baking powder? ›

For most cookie recipes and chocolate chip in particular, baking soda is the better choice.

How to make baking powder? ›

To make baking powder, combine half a teaspoon of cream of tartar and a quarter teaspoon of bicarbonate of soda. This provides the equivalent of one teaspoon of baking powder.

What does brown sugar do in cookies? ›

Brown sugar, meanwhile, is dense and compacts easily, creating fewer air pockets during creaming—that means that there's less opportunity to entrap gas, creating cookies that rise less and spread more. With less moisture escaping via steam, they also stay moist and chewy.

What happens if you put too much baking powder in cookies? ›

Too much baking powder can cause the batter to be bitter tasting. It can also cause the batter to rise rapidly and then collapse. (i.e. The air bubbles in the batter grow too large and break causing the batter to fall.) Cakes will have a coarse, fragile crumb with a fallen center.

How to make baking soda? ›

Baking soda, a/k/a sodium bicarbonate, was produced industrially for many years by the historically-important Solvay process. You can duplicate this by adding dry ice (solid carbon dioxide) to a saturated salt solution (sodium chloride) and concentrated ammonia (ammonium hydroxide).

Can I use flour instead of baking powder? ›

Unfortunately flour does not replace baking powder. If the recipe calls for plain flour and baking powder, you can use self-raising flour as a possible replacement. However, it is very likely that that won't work as intended.

Can cornstarch replace baking powder? ›

Let's cut to the chase. Cornstarch is not baking powder, and you shouldn't use cornstarch instead of baking powder or vice versa because they react differently and serve distinct roles.

Why do you put baking soda and baking powder in cookies? ›

Baking soda and baking powder are more common in recipes for cookies, cakes, and quick breads, and they are responsible for giving baked goods the light, fluffy, porous structure that makes them delicious.

What makes cookies rise baking soda or baking powder? ›

Baking soda reacts with an acid to cause batters and doughs to rise and spread while baking. Baking powder reacts with liquid and heat to create a light, fluffy texture in baked goods. While they sound similar, baking soda and baking powder cannot be used interchangeably.

How much baking soda and baking powder in cookies? ›

I would use 1/4 teaspoon of baking soda for every cup (125 grams) of flour. But that might vary depending on other ingredients. If the batter is very dense you'd want to either increaase that amount or supplement it with a little baking powder so it is activated by the heat of cooking as well as any acid in the recipe.
